WHere is a home-style take on a cocktail found on our latest menu. Designed as a batch prepared mix which is bursting full of tastes associated with holiday season, rendering it perfect for your celebration. Any leftover cordial for morning drinks, puddings, or for more rounds of this cocktail.
The Bikini Cocktail
Yields 10 people
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Syrup: Place the listed items inside a pot, heat until it reaches a gentle boil, stirring to dissolve. Next, take off the heat and leave to cool entirely. Transfer to a sterilised bottle, seal and store in the refrigerator, it can be stored for around one month.
Preparing the Cocktail Base: Pour the specified liquids into one big jug, allow it to infuse for one hour, then pass it through preferably using muslin, making it fully clarified.
To serve: Measure 85ml of your batch mix into a mixing glass filled with ice, and stir carefully for one minute to chill. Strain into a cold coupe glass or equivalent, garnish with the cranberries and finish by giving it a light spray of the essential oil over the top.
